Measure:
- 2 pcs onion red, peeled and quartered
- 2 pcs sweet potatoes, peeled and cut into wedges
- 2 pcs beetroot, peeled and cut into wedges
- 1 pcs fennel, trimmed and chopped
- 8 pcs vegan sausages
- 2 pcs oranges, peeled and cut into filets (you can use also blood oranges)
- 120 ml orange juice
- 1 tbsp thyme, dry
- 1 pcs star anise
- 2 tbsp maple syrup
- 2 tbsp soy sauce
- 2 tbsp olive oil
- pinch salt and pepper
- 2 tsp cumin, grounded
- 1 tsp chilli flakes
Preparation:
- Preheat the oven to 180˚C degrees.
- Add all the ingredients to an ovenproof baking dish and give the tray a good shake to mix everything up.
- Place the dish into the oven to roast for 35-45 minutes.
- Use a fork to test if the sweet potatoes are cooked before serving.
- Serve and enjoy.
