When people think of nourishing vegan cuisine, people often think of quinoa, or salads, or well-designed meat substitutes made from tofu. But have they ever thought about peanuts? Well, peanuts are more than just light snacks that you can enjoy on any occasion, whether it’s a night out with friends or a small break from your daily tasks. Peanuts can form the basis for one of the most delicious and spicy vegan dishes out there, the peanut soup. Curious? Check this recipe out!

INGREDIENTS:

  • 600 ml vegetable stock, low sodium
  • 200 ml soy cream, unsweetened
  • 100 gr peanuts, unsalted
  • 100 gr potatoes
  • 40 gr onions
  • 4 tbsp peanuts, unsalted, roasted and grounded
  • 1 pcs chili, green

PREPARATION:

  1. Peel the potatoes and cut it into pieces. Then, peel the onion and slice it brunoise.
  2. Heat a small amount of water in a pot, add the potatoes, onion, and peanuts and saute it.
  3. Fill it up with vegetable stock and let it simmer for around 20 min.
  4. Stir under the soy cream and blend it in the Mixer.
  5. Season it with small diced green chili.
  6. Ganrish the Soup with roasted and grounded peanuts. Enjoy.
