While we’re still waiting for the definitive end to this pandemic, we can still find joy and fulfillment in the small things that we can do at home, such as making tasty vegan dishes. INGREDIENTS:

  • 1 cup red lentils, rinsed
  • 2 tsp curry powder
  • 0.5 tsp turmeric, grounded
  • 0.5 tsp cumin powder
  • 0.5 tsp chili powder
  • 0.125 tsp red pepper, crushed
  • 1 clove garlic, crushed
  • 1 tsp ginger fresh, chopped
  • 1 cup tomato sauce, salt-free
  • 1 pcs onion, chopped
  • 750 ml vegetable broth, low sodium

PREPARATION:

  1. Put lentils in a pot with 2 cups of water. Bring to boil, cover, reduce heat and simmer until tender, for about 15 minutes.
  2. Combine curry powder, turmeric, cumin, chili powder, crushed red pepper, garlic and ginger. Heat 2 tablespoons water in a large skillet and sauté onion until tender, for about 5 minutes.
  3. Add spice mixture, increase heat to high and cook stirring constantly, until fragrant, which will take about 1 to 2 minutes. Stir in the tomato puree and vegetable broth, then cook for 5 minutes.
  4. Add cooked lentils and continue cooking for an additional 5 minutes. Enjoy!
