There are many kinds of legumes. Peanuts are the most common, and chickpeas have begun to gain traction in many circles. Lentils are one of those tasty legumes that you can find in a lot of different vegan food recipes, such as this one. Savor it here.

INGREDIENTS:

  • 6 cup water
  • 1 cup green french lentils, dry
  • 1 pcs onion, chopped
  • 1 pcs sweet potato, peeled and chopped
  • 2 cups cauliflower florets
  • 2 ribs celery, sliced
  • 1 can tomatoes, diced and undrained
  • 1 tbsp curry powder
  • 2 tsp herb seasoning, salt-free
  • 1 tsp onion, granulated
  • 1 tsp garlic, granulated
  • 4 cups swiss chard, chopped

 

PREPARATION:

  1. Bring the water and lentils to a boil in a soup pot over medium-high heat, uncovered.
  2. Reduce the heat to medium-low and cook uncovered, stirring occasionally, for 20 minutes.
  3. Stir in the onion, yam or sweet potato, cauliflower, celery, diced tomatoes (including the juice), curry powder, Italian seasoning, and granulated onion and garlic.
  4. Cover and simmer at a low boil for 15 minutes.
  5. Stir in the greens, then cover and cook for 5 to 10 minutes more, or until the lentils and yams or sweet potatoes are tender.
