The current pandemic has changed the way we live our daily lives, and tailgate parties might have to hibernate for a while before they’re considered free of risk. However, that shouldn’t stop you from having your own “tailgate parties” with your own loved ones and friends at home. INGREDIENTS:

  • 0.5 cup bulgur
  • 1 cup water
  • 3 cup onion, chopped
  • 3 cloves garlic, chopped
  • 2 pcs bell pepper green, chopped
  • 3 cup tomatoes, diced
  • 240 gr black beans, boiled without salt, drained
  • 400 gr kidney beans cooked, without salt (can)
  • 240 gr sweet corn, fresh or frozen
  • 2 tbsp chili powder
  • 2 tsp cumin powder
  • 30 gr cilantro, fresh, chopped

PREPARATION:

  1. Combine bulgur and water in a saucepan. Bring to a boil, reduce heat and simmer for 12 to 15 minutes or until tender.
  2. While bulgur cooks, heat 1/8 cup water in a large saucepan and water saute onions and garlic until almost soft, about 5 minutes.
  3. Stir in green peppers and saute for an additional 3 minutes, adding more water as needed.
  4. Stir in diced tomatoes, beans, corn, chili powder and cumin. Bring to a boil, reduce heat, cover and simmer for 20 minutes.
  5. Add bulgur and simmer for an additional 5 minutes. Stir in cilantro.
