However, as we wait for the world to slowly open up again, inspiration for vegan dishes might seem scarce. Worry not, because we’ve got plenty of stimulating vegan cuisine snapshots to inspire you. Let’s begin with some dessert! This no-bake oreo vegan cake belongs to @your_vegan_coach, presenting a sweet and lovely morsel of oreo goodness and coconut flavors. The berries on the top help make this dessert stand out, while the mint leaves add an extra layer of decoration. No-bake desserts have a soft spot in our heart, and this particular cake looks stunning.

 

 

Next up is @thevegpanda’s mouth-watering stuffed sweet potatoes, filled with chickpea cucumber salad and miso tahini. This tasty meal makes our stomach growl, and with all the ingredients that it lists (broccolini, parsley, aleppo pepper and many others), we’re sure that these stuffed potatoes are tasty and healthy at the same time.

 

 

We enjoy a bit of color in our meals, and this tall stack of rainbow pancakes by @mytemptingtable truly delivers in that regard. This set of colorful pancakes is made from a variety of healthy ingredients, from spirulina to beetroot. Imagine starting your day off with this bright and vivid meal, a splash of rainbow-colored goodness to make the next few hours worthwhile.

 

 

@asimplepalate presents a savory bowl of pasta, made with basil, balsamic vinegar and juicy roasted tomatoes. We love our pasta, and this particular pasta dish feels quite fresh. We really like the usage of tomatoes in pasta outside of tomato sauce, because it makes the dining experience taste unique and sumptuous. This plant-based bruschetta is one to remember.

 

 

Our final pick of the week belongs to @sweet.in.nature, showcasing an artistic loaf of fluffy focaccia. Focaccia is an Italian bread prepared and served in a similar manner as pizza bread, with soft textures and herbal flavors. This particular focaccia bread is given a striking design, one that elevates it from a baked meal to a work of edible art.
