While we do love vegan food, we also love the scent of rain as it touches the soil, the sound of rustling leaves as the wind passes by, and warm feeling of sunshine as it first washes over the morning landscape. Small moments of peace and wonder are the bedrock of the day’s happiness. Welcome to this week’s Food Friday blog.

Our first pick of the week belongs to @ale_in_bedford, presenting a delicious close-up of their sumptuous jackfruit stew. Jackfruit is great for savory meals, and just like the tomato, it’s a very versatile fruit. You’d be surprised by how many savory dishes you can prepare with jackfruit, as evident by the mouth-watering goodness of this particular dish.

 

 

Next up is this wondrous raw vegan lemon cake, courtesy of @foods.and.roots. This homey and comforting photo accents the soft and chewy textures of the raw vegan dessert, enough to make us crave for something like it to be served on our plates. The way the light reflects off the sweet yellow surface of the meal just sells it to us. This lemon cake inspires us to try more raw vegan recipes, particularly desserts. How about you?

 

 

Want some savory pancakes? Check out @heartbeetvegan’s awesome homemade Okonomiyaki! Japanese cuisine might incorporate seafood in some of its meals, but there are gems that you can easily make vegan, such as this pancake delight. Like a pizza or a pie, you can totally customize the okonomiyaki to your liking. With a name literally meaning “what you like”, an okonomiyaki can be prepared in any way that you desire.

 

 

@zardplants presents a bowl of golden mushroom pasta, mixed with uniquely umami mushroom bits. The bold mushroom flavor and the creaminess of cashew butter (or coconut milk) collide into a comfy meal. The earthy, familiar colors really enhance the warmness of eating this meal. Plus, there’s a link to the recipe in the description, so you don’t have to just imagine yourself eating it. You can make it yourself!

 

 

Our final pick of the week belongs to @phe.nom_a_nom, presenting an eye-catching waffle dish served with kiwi and cranberries, two fine fruity additions to the ever-tasty waffle. This square breakfast meal is colorful, quirky and quite invigorating to look at. Really, the kiwi, cranberries and lightly-colored waffles have this strange visual effect, as if suggesting that eating it lets you taste something whimsical. Visually it’s a lot like a boat, or a window. Have you tried any homemade waffles lately?
