Making vegan cuisine can be compared to taking a slice out of the sunshine. You’re gathering the bounty of the world and making it a delicious meal to nourish yourself and the people that you love. Whenever you make a plant-based recipe based on the culinary cuisines of other countries, or even ones based on your peers, you’re partaking in the beauty of the world around you, a world shared through the medium of food. Our first pick of the week belongs to @manjusha.vishwakarma, presenting their lively besan gatte recipe. The many regions of India are home to many kinds of spicy and flavorful cuisine, and besan gatte is just one of them. You’d be surprised by the number of Indian cuisine options that are vegan or can easily be made vegan with a few substitutes. This particular dish just looks so vibrant and eye-catching. It must be the yellow hue.

 

 

Next up is @joelle_chaker’s lovely vegan pizza, a colorful amalgam of wonderful green ingredients. Vegan pizza is a lot like vegan pasta, in how it’s the plant-based rendition of a popular dish, with a lot of room for variety and personal touches. We love the way that the greens on this pizza stack together, providing a sense of depth to a usually flat-looking dish. Oh, to share pizza with friends again!

 

 

@brundleflybean presents this exquisite vegan ravioli recipe. We’ve mentioned above how vegan pasta is super-customizable, considering that it can be prepared in many different ways. This particular vegan pasta dish is a striking shade of red, broken up by the whites of the ravioli and the tasty green bits of the spinach. It’s really wonderful how spinach works well with different kinds of pasta, including ravioli. Yum!

 

 

Next up is @veganchefleon’s crispy summer salad, just in time for the warm and sunny months ahead. This bowl is a riot of calming colors, from stark greens to crunchy browns, with apples, snow peas, cabbage slices and so much more making up its composition. Great salads can easily make a summer day twice as enjoyable. Just imagine yourself sitting back and relaxing as you dine on this crunchy dish.

 

 

Our final pick of the week belongs to @eatingwithaiden, presenting their naan and dal meal. A simple yet elegant combo of exciting dal ingredients and tasty nan textures, this plate looks so enticing. Naan is a unique type of bread that we’d love to eat more of, while dal is an Indian staple that we’d totally prepare and use in different dinners.
