Finding happiness can be easy or difficult to achieve, depending on what makes you happy. It can be a goal that takes a while to reach, like gaining muscles, or it can be quick, like preparing easy vegan recipes. Whatever makes you happy is important in these strange times. Welcome to this week’s Food Friday blog.

This week, we’ve prepared a great selection of food photos for you, gathered from the galleries of Instagram’s great foodies. We’ve got salads, stir fry’s and more.

Our first pick of the week belongs to @herefortheherbs, presenting another great example of delicious vegan stir fry. This crispy tofu and eggplant dish is sprinkled with sesame seeds, and coupled with its magnificent lighting, it just looks so home-based yet sophisticated, like a specialized restaurant dish. We’re always glad to see well-presented vegan food.

 

 

Next up is @themasalagirl’s lovely Aloo Baingan, a heavily plant-based Indian dish made with tomatoes, eggplants and memorable spices. We’re always happy to see plant-based local cuisine from different countries, and this aloo baingan just makes our mouth water. Coupled with the tortilla, this photo certainly makes us want to reproduce the dish at home.

 

 

@maximumzen’s gorgeous dessert is just so eye-catching. The deep colored hue, along with the flecks of white just make this sweet meal emanate luxury, but at the same time, it looks so fluffy and similar to various snack foods that you might see in your own neighborhood. We’re loving this violet masterpiece.

 

 

Feast your eyes on @gracefullplate’s vegan soba noodle recipe, complete with spicy peanut sauce. Soba noodles are a buckwheat-based noodle variant that works well when you want a thick and filling noodle experience. Spicy sauces can also really enhance your meals, which is why this soba and peanut sauce dish looks amazing.

 

 

Our final pick of the week belongs to @nosh_korea, presenting a relatively less colorful yet still exciting Peppermint Crunch energy bar. Energy bars are super easy to pack and eat, and in this time of busy home-based work, we all need a quick yet energetic bite every now and then. This particular bar looks packed with nutrients, for both adults and children alike, a special meal for the hardworking people out there.
