Enjoy the lighter things in life as they come. Some days might be heavy, but in between busy schedules and tough times, there are still pockets of rest and happiness that you can enjoy. Welcome to this week’s Food Friday blog.

This week, we’ve got a great selection of vegan dishes in store for you, meals made by the great foodies of Instagram. We’ve got bowls, bites, muffins and so much more. Still waiting for the chance to go on vegan holidays? Partake in something tasty while we anticipate a better and safer tomorrow.

Ready? Let’s go!

Our first pick belongs to @nicebiteseatery with a delicious vegan nut Oreo brownie. The color brown may not be the most vivid of hues, but it’s certainly one of the most appetizing. Just look at this brownie, with its fine textures and bits of cookie stuck to it. You can almost taste the chocolatey softness of this dessert in the picture!

Desserts are always a real treat, such as these vegan chocolate chip cookie bars by @nutri.foods. Served with biscoff drizzle that’s sure to give it a sweet twist that we won’t expect, these bars would be a great way to cap off your filling lunch and dinners.

Want some muffins? @thehiddenveggies has got you covered! Check out these mint chocolate chip spinach muffins! Looking for some way to incorporate plant-based creativity with the flavor and appeal of baked dishes? These great muffins have that and more. Yum!

Take a gander at this great angel hair vegan pasta by @zmakesfood. With a bunch of great additions like portobello mushrooms and jalapenos, this pasta dish is bound to make you taste something great that you’ve never tasted before. Angel hair pasta is a unique type of pasta that allows for different mouth-feels and flavors.

Our final pick of the week belongs to @tattooedcheffoods, showcasing a bowl full of energy-giving and nutritious ingredients, including quinoa, kale and riced cauliflower. The best thing about vegan bowls is that you never know what to expect, but you are at least aware of how great you’ll feel right afterward. We all need our fuel to get through the day, after all.

That’s it for this week. Be sure to visit us next week for a fresh batch of great vegan cuisine. Interested in showcasing your vegan snacks in our weekly gallery? Just add the hashtags #FoodFriday and #VacationingVegan on your future IG vegan food photos, and who knows, maybe you’ll be featured in a future blog!
