It’s 2021! The previous year has been quite eventful, to say the least. With a brand new year ahead of us, let’s keep doing what makes us happy and improve on the things we need to improve on, like our culinary skills. There are plenty of easy vegan recipes floating around the internet, and one of the best ways to keep yourself motivated while indoors is to try out new and exciting dishes. This week, we’ve got a great gallery to kickstart the new year, from plant-based cakes to all-green vegan quiches. The great foodies of Instagram have been quite busy, and it’s always inspiring to see new and delectable takes on vegan cuisine. Start 2021 with a fresh outlook with some new recipe ideas!

Our first pick of the week belongs to @her.bivoracious, presenting a nutritious plant-based Mexican Pizza! It looks a lot like a soft and chewy cookie sandwich. The tomato slices really accent the “vegan-ness” of this particular dish. Vegan pizzas are delicious, and can come in all shapes and sizes. This particular pizza looks quite fresh.

 

 

@elevegan presents this filling vegan quiche, a great pastry tart full of tomatoes and other veggie delights. Vegan pastries are some of the most satisfying dishes to eat during celebrations. The first few days of the new year are days worth celebrating, so why not prepare this plant-based quiche for your NYE meal?

 

 

Check out this vegan ravioli, presented by @veggemini. Raviolis are a type of pocket-like pasta that you fill up with delectable ingredients, in this case vegan ricotta and spinach. Yum! It’s always a good idea to try more than one kind of pasta, from the flat linguine to the pocket-like ravioli. Broaden your horizons!

 

 

@getsquashed presents this mouth-watering spicy vegan red curry. Here we see a bunch of delightfully umami ingredients in a sumptuous bowl. Curry is well-known for its strong, appetizing smell and its lasting spiciness and flavor. When the winter days are getting chilly, why not prepare some plant-based curry?

 

 

Our final pick of the week belongs to @hungriehippie, showcasing an expertly-designed vegan vanilla cake. “Vanilla” often describes things that are unadorned and somewhat quote-unquote “bland,” but if you’ve ever tried a good vanilla dessert, you’d be surprised at how distinct and memorable the flavor is. Sure, this cake might seem less adorned than others, but we’re sure that it’s got some delicious flavors hiding beneath its white surface.
