Don’t you just love chickpeas? They’re just so tasty when prepared as is, but they’re even better when you’re creative with them. Such is the case with @chowda85’s chickpea and edamame burger, a lovely combination with an appetizing result. Vegan burgers are made best when they don’t just attempt to replicate the shape and taste of meat patties. It’s so much more satisfying to play to the strengths of plant cuisine when making such delightful dishes.

 

 

Ah, ratatouille, the Provencal delight that took the world by storm. @itacate.cologne presents this sumptuous rendition of this pastoral French delight, a wholly vegan farmer’s meal that incorporates the veggies found in the backyards of Provence’s farmers. The way the tomato sauce compliments the veggie slices never fails to make our taste buds satisfied. Have you tried ratatouille lately?

 

 

Who doesn’t love sandwiches? They’re easy to make, and you’ve got plenty of ways to prepare them! Here we see @noosasourdoughco’s rendition of the sandwich using spiced turmeric sourdough with salad filling. Just look at that bright yellow coloring! While orange might be better known as the appetizing color, yellow has its own charm. The bright hue just invites your stomach to growl in anticipation. Turmeric is a tasty Indian spice that more people should try out.

 

 

Oh, pasta. @plantbasedalina presents their plate of tasty stuffed shells, using cashews for the “ricotta” stuffing. We’re loving the chunky red texture of the sauce as it coats the white shells, the hints of the cashew-based ricotta peeking out of the curves and whorls of the shells. Really, all the warm colors are so appetizing, and It’s never too soon to try a new pasta recipe.

 

 

Our final pick of the week belongs to @plantfullybased, showcasing their plate of roasted brussel sprouts and broccoli, their green hue accented by the striking red color of the pomegranate seeds. We never really understood the bias against broccoli while growing up. Broccoli is one of the best vegetables for growing kids and adults, and pairing it up with brussel sprouts just guarantees a tasty and healthy meal for any time of the day.
