Plant-based cuisine has changed over the years, evolving and improving with each new generation of plant-based enthusiasts. The advent of the internet age has allowed vegans from all over the world to share their recipes and showcase their creations with ease. In this time of pandemic, it’s heartwarming to know that despite the physical distance that we must maintain, we can all still connect with each other and share our mutual passions. Welcome to this week’s Food Friday blog.

This week, we’ve got a great gallery of vegan cuisine pics for you to peruse, prepared by the many great foodies of Instagram. We’ve got macaroni, zucchini, and other delightful slices of great plant-based meals ready to show you.

Ready? Let’s dig right in!

Let’s start this Friday with something Greek! @rabbitandwolves presents this sumptuous Greek Style Macaroni with vegan cheese. Just look at the textures of that mouth-watering bowl! Yum! Oh, so yum. You can see the various ingredients clearly too, from the olives to the tomatoes to the spinach. This dish is a great way to start your cold December mornings.

Go on delicious vegan tours aboard these bite-sized zucchini boats. @billysfooderie presents a pair of stuffed green zucchinis that have some of the best and tastiest vegan ingredients out there, like capsicum and tomatoes. Tomatoes go well with a lot of plant-based dishes, and we’re certain that their unique taste has flavored this meal in a significant way.

This well and full bowl by @wellandfull looks lovely! Made with the ever-versatile pasta, the ever-flavorful chickpea, and a bunch of other wonderful ingredients like carrots and hemp seeds, this bowl just looks so fresh and nourishing. The recipe instructions are also pretty quick and easy to follow, so if you want a vibrant dish to nourish you today, check this one out!

Shepherd’s pie! No need for meat here. This creamy tub plant-based lentil shepherd’s pie is by @plantbased_tastesgreat. Here we see an appetizing layer of yellow potatoes obscuring the rich red filling, gently scooped out and dolloped onto the plate for eating. Oh, the Holiday season is coming up, and we’re sure that many of us are looking for the perfect cold winter meal to enjoy around Christmas time. Well, here it is!

Let’s return to form and end our week’s gallery with some dessert! This lovely slice of cinnamon-flavored vegan apple puff pastry cake is by @daria_cooks_vegan. Here we see the top part of the cake festooned with warm-looking apple slices, pie-like in presentation and cake-like in texture. Again, if you’re looking for some great dessert options for your family and friends during this holiday season, this apple cake is the dish for you. Ah, just imagine eating a slice of this by a warm fireplace, or even just snuggled up on a couch. So comfy.

That’s it for this week, but don’t fret, visit us next Friday for another fresh gallery of plant-based dishes! Want to join in on our weekly blog? Just add the hashtags #FoodFriday and #VacationingVegan on your future vegan IG food photos, and who knows, maybe you’ll be featured in a future blog!
