Every day is a new opportunity to better your life, a chance to improve from where you were before. Even if outside factors, like this current pandemic, are weighing you down, you can always get back up and make an effort to be happy, to make the hours less idle and to produce new and joyful things, be they art, food or even good memories with your loved ones. Welcome to this week’s Food Friday blog.

This week, we’ve got a nice collection of vegan cuisine for you to browse through. From the dedicated foodies of IG, we’ve compiled a nice selection of vegan food photos that we hope inspire you on your own food endeavors.

Ready? Let’s dig in!

We just can’t get enough of great ratatouille! @mina_fine_art_photography presents this delectable close-up of her rendition of vegan ratatouille. This particular take on Provence’s most popular dish uses vegan cheese, eggplant, spinach, zucchini and other assorted ingredients befitting this great French meal. Oh, what we’d give to be able to explore France again!

Starting the new week with this healthy kale salad, tofu and my yummy peanut sauce! 🌱😋😋 I love this healthy salad with quinoa. Starting the week with a healthy meal is such a simple routine to make sure you eat more healthy meals as a family. It motivates you for a new week, give you a reset from the weekend and helps in giving you all the nutrients you need to avoid burn out by the end of the week! I am adding this kale salad on our menu soon but tonight we are actually having the chickpea ratatouille stew from my cookbook Healthy Little Tummies 🌱🥰 Have you got your copy? Have you tried that recipe? 🥰😊 Recipe for the kale salad: https://healthyfrenchwife.com/2020/03/03/the-best-kale-salad-ever-with-a-peanut-sauce/ #kalesalad #tofusalad #vegansalad #peanutsauce #whatveganseat #bestofvegan

A peculiar coincidence! @healthyfrenchwife showcases peanut sauce-covered kale salad, complete with quinoa and broccoli. We just love how the lighting of this particular food photo seems to highlight both the aesthetic beauty of the bowl and its implicit healthiness. There’s a link to the recipe too, so you can appreciate the taste of this nice dish yourself.

Dessert time! This cocoa overnight oat dessert comes from @cook_be_clean, using a variety of flavorful ingredients like banana, cocoa, cinnamon and pistachio milk to make a great cold mix of delight. The pale color of this overnight oat looks amazing too. It’s almost like a pleasant cloudy sunset from a childhood so long ago. Sorry, we’re waxing nostalgic here. How about you? Have you ever made a vegan dish that made you nostalgic?

Let’s get something nice and savory here! This set of mouth-watering tofu and mushroom tacos is presented by @vader_eats. If you’re looking for a filling and protein-filled dish, why not try something bite-sized like these tacos? There’s a sense of ease and portability to them that makes vegan taco dishes so appealing. Also, you can totally fill these tacos with whatever ingredient you want. They’re just that versatile.

Our final pic of the week belongs to @rawdiculous2020, presenting this set of chocolatey raw-cake bites. While we’d never say no to a baked vegan cake, raw desserts have this memorable flavor and mouthfeel to them that most baked delights don’t have. Hence why we think that this particular raw cake must taste absolutely delicious!
