There’s nothing wrong with doing things that make you happy. As long as you’re not hurting anyone or anything, pursuing your passions and enjoying your life is a worthy motivation. Sometimes, it’s the simple things that really help us get through large challenges in life. Recreating easy vegan recipes, for example, never fails to make us smile. Welcome to this week’s Food Friday blog.

This week, we’ve got a great selection of vegan food photos that remind us of the simple joys of living, from pastas to mushrooms to tasty desserts. Let’s all remember to make the most out of our lives and uplift each other’s spirits in such a challenging time.

First up is this stylish edamame hummus bowl by @ogclara, a light green delight full of aesthetically-placed seeds. Crackers and other finger foods are greatly enhanced by good vegan dips. While we do enjoy our soups and salsas, hummus provides just the right savory kick that we often look for in a snack.

 

 

@himmelhousedips presents a wonderful set of vegan ribs. Mushrooms are one of the best meat substitutes in vegan cuisine. Not only do they provide a unique umami flavor, but they can also be paired with many different sauces and cooked in various different ways. All in all, these vegan “ribs” look delicious!

 

 

Next up is this almost minimalistically-presented vegan lasagna by @vudduy. There’s something about the colors of lasagna that makes them oh so appetizing. Maybe it’s how the chunky red sauce looks rich and filling against the white backdrop of the plate. The various ingredients listed in the post just makes it all the more mouth-watering. We’d love to savor some vegan lasagna one day soon.

 

 

These sweet potato choco & caramel brownies by @alessia_pastrychef look amazing! Sweet potato is an underrated ingredient in vegan meals, and seeing it as a key component of a dessert snack is quite refreshing. Coupled with chocolate and caramel, these brownies look like they’ll be a guaranteed hit for one’s sweet tooth.

 

 

For our final pick of the week, we’ve got another great pasta dish to admire! @saragoesgreene presents a delectable spaghetti plate with vegan “meat” balls, made from a selection of great ingredients that are sure to complement the tasty pasta. At this point, tempeh is not even a meat substitute anymore, but a filling vegan ingredient that stands on its own merits. Comfort foods like this remind us of the simple and pleasant things in life.
