The first photo to make our top 5 list this week is from our very own Director of Development @fatgayvegan who is currently based in Mexico City. This curry bowl was snapped at a brand new Indian vegan restaurant called Naan Mexico, located in the historic Mexico City neighborhood of Santa Maria la Ribera.

 

 

This next photo from @katelynbshp is one for true chocolate lovers. Dessert aficionado Katelyn is a graphic designer in Vancouver, Canada but she could certainly make a living as a vegan pie chef if this is what she can produce. Honestly, just look at the crust and the irresistibly dense chocolate pie filling!

I’m usually inspired to make a salad when I have a bunch of random things in my fridge. 💃🏽Today’s concoction includes spring mix, cucumber slices, avocado, pomegranate seeds, roasted beets, roasted chickpeas and some random seasoning (sprinkle of smoked paprika, garlic, sesame seeds and salt). Smoky sweet. 👏🏽 . Roasted Chickpeas 1 can roasted chickpeas, rinsed and drained 1 tsp smoked paprika 1 tsp garlic powder 1 tsp dried onion 1/4 tsp salt Pinch of cayenne pepper . Preheat oven to 425F. Place drained chickpeas on a clean towel and remove some moisture. Place in a bowl and toss with seasonings to evenly coat. Spread chickpeas out on a lined baking tray and place in the oven for 30 minutes, stirring them around 15 minutes into baking. Remove from oven and allow to completely cool before serving.

The best part of a plant-based banquet like this is the lack of dishes that need washing once you are done!

 

 

As much as we love fruit, we also have a soft spot for decadent vegan cakes. Many parts of the world are gearing up for Halloween (including all of us in our North American office) so it wasn’t difficult to pick this pumpkin spiced cake by @robertbothma as our final Instagram pick for this week’s #FoodFriday.
