Everyone likes to have more options, whether it’s in food, fashion, or life choices. Nobody likes to be too constrained by a lack of choices. The pandemic may have postponed many of our travel options, like vegan cruises and adventures, but thankfully we can still showcase great vegan food photos to inspire you on your future food endeavors. Welcome to this week’s FoodFriday blog.

This week, we’ve got five new plant-based food photos by the dedicated food bloggers of Instagram. We’ve got popsicles, potatoes and so much more in store for this week’s entry.

Let’s start this Friday blog with some stuffed sweet potato, courtesy of @asianfruityninja. This food photo, with its quinoa, spinach, tomato salsa and assorted greens reminds of a present, in how the sweet potato opens up to reveal a delightful interior. Also the colors. What’s sure, this appetizing food photo can give you great ideas on how to prepare your plant-based recipes in a unique way.

 

 

When we’ve got the munchies, it’s always important to have something quick and easy to chew on, especially while you’re working in the afternoon. These protein balls by @sahara57hb seem like the ideal snacks for vegans in need of quick bursts of energy as they go through the motions of each day. Who doesn’t love the gluten free taste of vanilla

Yet another sweet vegan treat graces us, courtesy of @shortgirltallorder. These no bake cookie dough popsicles look quite stunning, with the pale exterior giving way to the colorful ingredients within. There are plenty of ways you can be creative in your preparation of vegan cuisine, and cookie dough popsicles are a great variation of your traditional cold treat. We’d love to make a few of these delights and deliver them to our loved ones, once it’s safe to visit them physically.

Spaghetti with Peppers and Artichokes 🌿🍃 You guys, if you're needing a hug disguised as a pasta bowl this week, please look no further. 🌿🍃🍅🍝 . I will happily admit that this spaghetti has been my go-to lunch for the last few days 😋 and perhaps it's because I wasn't willing to share 😁🌿🍃. . Hopefully you'll be more willing than I was, but it may be hard 😜😅 It's kinda one of those twirl-while-it's-still-in-the-pan type situations 😋🍝🙈 . This spaghetti is SO delicious and simple, and the full instructions and my homemade (super easy) marinara recipe is up on my blog now (link in bio). It's seriously yummy and versatile to add your favorite veggies. 🌿🍃🍅 . 1/2 lb. pasta (used spaghetti) 2 tbsp olive oil 1 tsp kosher salt 1/4 tsp pepper 2/3 cup finely chopped onion 1/2 cup vegetable broth 1 pint cherry or grape tomatoes sliced 1.5 cups marinara sauce 1/2 tsp garlic powder 3/4 cups jarred marinated artichokes drained, chopped 1/2 cup roasted peppers chopped Cook pasta until al dente, in salted water. Drain, set aside. In large pan, add oil, onion, salt and pepper. Cook until onion is translucent, stirring often. Add broth and tomatoes, cook for 5 min. Add remaining ingredients, cook another 5 min. Add pasta, stir. @janetsmunchmeals presents this vibrant artichoke and pepper spaghetti, a pasta whose vivid hue just makes our stomach rumble. We feel that her description of the dish as “a hug disguised as a pasta bowl” is quite fitting. Eating freshly-made pasta can be comparable to receiving a hug, because of how warm inside you feel afterwards. These days, a lot of us could use a hug, or a pasta bowl. The recipe provided here can make that happen.

Fluffy waffle stack ❤️ Are you team pancakes or team waffles? I would always go for waffles ⚡️Find my favorite vegan waffles recipe below 👇🏻 Feel free to add cacao powder, fresh blueberries, lemon zest or cinnamon, whatever your cupboard offers 🙌🏻 Happy Sunday, Sarah x – 200 g flour (I use spelt) 2 tbsp sugar (you can use coconut sugar) 2 tsp baking powder Pinch of salt 1 tbsp olive or coconut oil (melted) 2 tbsp apple sauce, mashed banana or soy yoghurt (choose one of them, all work the same 😉) 300 ml plant based milk – Mix all in a bowl bowl, let it rest for 10 min and then bake in a waffle iron. I stacked them up with soy yoghurt which I colored pink before by adding some beet root powder. Vegan waffles are a great way to start a day, but hey, who’s stopping you from eating them at lunch, dinner or 3AM in the morning? (although we wouldn’t recommend the latter, because you should maintain a healthy sleep schedule, but we digress.) @oneslicemore presents these lovely plant-based waffles with strawberries, and maybe even cinnamon or blueberries, if you’re so inclined. The presentation of this dish is quite professional, and with the recipe listed, we can see if our own rendition of it will look just as great.
