No one’s stopping you from trying delicious dessert first! @chefteresa ray presents a delectable slice of vegan pecan pumpkin pie, in a savory yellow hue that is sure to make you swoon with delight. Nuts always provide a great sense of crunchiness and flavor in any dessert you serve them with, and, combined with the taste of pumpkins, will surely give your mouth a pleasant experience.

Spicy Jackfruit Tacos 墨西哥香辣波蘿蜜塔可 Oh my! This is my first time to try JACKFRUIT!! I have been hearing how popular this cool thing is for a while, people make it as pulled pork style. I could only said.. I had sooo much fun with it!! Mix the jackfruit with all the spices, it turned out very yummy. I asked my hubby (who has just been vegetarian for 3 months) how did it taste, he told me it certainly tasted like pulled pork for sure! Wish you all get to try this yummy spicy jackfruit tacos with your family 🙂 Ingredients: -1 package of young jackfruit(wash and drained, I got mine from Walmart) -2 medium sized organic tomato chopped -1 organic avocado -half red peppers and half yellow pepper chopped -1tpsp tomato paste -1tpsp smoked paprika -1tpsp cayenne or Chili powder -1tpsp ground cumin -1/4 dried oregano -fresh cilantro chopped -salt to taste -to serve, some fresh lime Instruction: 1.Break the jackfruit into shredded pieces and set aside 2.preheat the oven til 400F, put diced avocados on a baking sheet and sprinkle sweet paprika evenly on avocado. 3.Heat a skillet with a bit oil, stir fry the red yellow peppers til they get soft for 5 mins. Put tomato and tomato paste in the skillet and stir well for another 3-4 mins. 4.Put all the spices into the skillet (smoked paprika, salt, Chili powder,cumin,oregano) and stir all the ingredients well and pour 1/4 water in the skillet. Cook 4 mins on a medium heat 5.put avocados and taco shells in the oven and bake for 10 mins (for taco shells, I only baked them for 3 mins) 6.put shredded jackfruit into the skillet and stir the jackfruit and the sauce well til jackfruit absorb all the flavour and sauce. Try the taste and adjust. 7.put the jackfruit and veggie in taco shells, put some avocados and cilantro on the top. @setu29 presents some fresh and photogenic vegan toast. One piece is set with coriander chutney and fresh tomatoes, while the other has hummus spread and fresh cucumber slices. Breakfast is the most important meal of the day, and a fresh and healthy meal to start your morning is bound to help you keep going in whatever tasks you’re doing.

 

 

Rice is a staple food in Asia, and various toppings and viands have been made to accompany it in a meal. Take curry for example, which itself is a staple food in India. There are various ways you can prepare rice and curry together in a vegan way, one of which is showcased in @healthy_veg_innings’ photo of a delectable plate of vegan vegetable curry.
The hemp seeds are a nice touch, as they emphasize the rich, appetizing redness of the curry over the rice.

MOROCCAN-INSPIRED TOFU SKEWERS 🇲🇦 As much as I would love to be on a road trip or spending time with my family and friends for Memorial Day weekend like I always do, I am super excited about this delicious meal that I have planned for my family to make up for it. These tofu skewers are definitely on the menu! My favorite way to eat tofu, marinated in bold spices and then grilled to perfection. *Feel free to adjust the spices according to your taste. *You can either use an outdoor grill or a grill pan on a stove top . . Serves 2-3 INGREDIENTS 1 pack of extra-firm tofu 1/4 cup of extra virgin olive oil Zest of 1 lemon Juice of 1/2 lemon 1 tbsp ground cumin 1 tsp cayenne (or more if you want it spicier) 1 tsp smoked paprika 1/4 tsp ground cinnamon 1/2 tsp saffron threads 2 garlic cloves, crushed Salt and pepper, to taste 2 tbsp finely chopped fresh cilantro (optional) 3 tsp finely chopped fresh mint INSTRUCTIONS 1️⃣Remove tofu from the packaging & wrap it well in a dish cloth. Set tofu in a bowl and place a heavy object, like a cast iron skillet on top of the tofu block. Let the excess water drain out of the tofu for at least 30 minutes. 2️⃣Cut the tofu blocks into cubes & set aside 3️⃣In a bowl, whisk to combine olive oil with all the other ingredients, except the fresh herbs. 4️⃣Carefully toss the tofu cubes in the marinade and let it rest for at least an hour in the refrigerator 5️⃣Preheat grill/grill pan to medium-high. 6️⃣Thread tofu cubes onto skewers. 7️⃣Brush remaining marinade (if any) on to the tofu. 8️⃣Grill tofu until all sides brown evenly. Once they are done, add fresh herbs and serve hot with grilled lemon slices Enjoy! Our last pick for this Food Friday blog is this gorgeous photo of Moroccan-inspired tofu skewers by @yummyyatra. Ah, that well-grilled tofu is just so mouth-watering! There’s even a great recipe and preparation guide to accompany this food photo. While we can’t visit many vegan restaurants due to the global pandemic, we can still make delicious meals at home, such as these wonderful tofu skewers.
