Our Food Friday blog is dedicated to great vegan cuisine. Each week, we compile 5 great vegan dishes from the dedicated foodies of Instagram. This week, we’ve chosen 5 great compassionate meals that look like they can provide comfort with each bite.

Let’s start off with @millennialbradybunch’s breakfast toast recipe. Using smashed peas, vegan mayo, lemon juice, shallots, tomatoes, salt and pepper, @millennialbradybunch a vegan meal that’s simple to prepare but still delicious all the same. It’s amazing how a little culinary ingenuity can go a long way.

 

 

Next up is a great 15 bean soup by @karinas_vegan_dishes, presented in a crunchy homemade bread bowl. Served with a side of rice, tomatoes, and greens this bread bowl bean soup is sure to be a filling lunch meal. Bread bowls are such a great receptacle for vegan foods, don’t you agree? From wet soups to warm veggie meals, bread bowls are fit for putting all your tasty delights in a nice, edible container.

 

 

@bowlsandladders presents our next Food Friday pick, a Mediterranean grill pan of eggplant, tomatoes, black eyed peas and other assorted vegan ingredients. There’s something so appetizing about red, black and light brown ingredients served together. With that said, we just can’t help but feel hungry wondering what this meal must taste like. We ought to try more Mediterranean-style dishes on our own.

 

 

Everybody loves avocado, and vegan foodies always find new and creative ways to enjoy this delicious fruit. @delishvegantales presents another great vegan breakfast toast, this time with avocado and vegan cheese. Remember what we just said about appetizing colors? Well it looks like light green and thick, textured yellows also make our stomachs hunger for a hearty vegan meal. We’d just love to bite deep into a toast as enticing as this!

 

 

Last but not least is @michemunchies’ creation, a pair of scrumptious-looking mushroom toasts, mixed with kale, seeds, hummus and served on sourdough. Mushroom is such a hearty vegan dish and many vegan meals have shown that mushrooms are great and filling, something that makes it perfect for one-stop meals designed to keep you going while working.
