Greetings fellow vegan foodies! It’s Friday once more, the day where we present our enticing #FoodFriday blog. For those unaware, our Food Friday blog is dedicated to the admiration of wonderful plant-based cuisine, featuring great vegan foods by the dedicated foodies of Instagram. This week, we’ve compiled a great selection of #Veganuary food options, perfect for the vegan and vegan-curious alike.

RECIPE 6: Mexican style quinoa salad w buttery charred corn & caramelised onions ✨ – Boil some quinoa in a pot using the same ratio of water to quinoa as you would to rice. – Once it’s boiled and cooled (will take around 8-10 minutes) place in a bowl with chopped tomatoes, cubed avocado, 1 cup of kidney beans, fresh lemon juice, olive oil and S&P. Mix well to combine ingredients. – Cut 1 onion in half and then slice. Pan fry in a pan with a small amount of oil or water and when browned add some balsamic vinegar and maple syrup. Cook for around 5-7 minutes until they start to caramelise. You can continue to cook them down even more if you like. – Remove from pan into a small bowl and then cook your corn – Use my plant based butter and S&P and cook until they get nice and charred and buttery. I added a little extra butter at the end 😬😏 – Arrange on a plate and I topped with some fresh herbs I already had, mint and basil… coriander would be the best option but I didn’t have any! – ENJOY 🙂🙂

Dumpling recipes can be found all over the world, but the most famous one is the Chinese Jiaozi, which most probably inspired the aesthetic of this plate of vegan food. We can imagine ourselves leisurely eating these great-looking dumplings while curled up with a book on a sunny afternoon. Or anytime, to be honest!

Veggie & Wild Rice Falafel Pizza 🍕 Ingredients👇🏼 4-6 Bite Me Fine Foods Organic Wild Rice Falafels 1 wholemeal pizza base 100g beetroot hummus 2 mushrooms, thinly sliced 1/4 cup fresh rocket 1/2 capsicum, sliced 40g marinated feta, cubed 1/4 red onion, sliced 1/4 cup Mozzarella cheese Method: 1. Preheat oven to 200 degrees. 2. Spread beetroot hummus over base. 3. Add onion, capsicum, mushroom feta, rocket and Falafels. 3. Roses are red, violets are blue, eat your vegetables, because they are good for you. So this is my version of ratatouille. Individually wrapped sliced zucchini, carrot, squash and eggplant. The sauce I made from scratch, it's fresh tomatoes with the onion and carrots, I used 3 Serrano peppers and boy was it spicy, and I added a great amount of curry. It was definitely delicious, specially on a side of white basmati rice. The color combination and the aroma was absolutely a delight to cherish. Ah, ratatouille. Initially a rural French dish, this wonderful all-vegan stew has become popular all over the world. @chef_narb presents a vibrant spin on this Provencal meal, individually wrapping and slicing the veggies of the ratatouille and preparing the stew with Serrano peppers and curry. We’ve never tried spicy ratatouille before, but we’re excited to try some now!
