It’s always great to start the day with a nice, sunny morning routine. Sometimes it’s a short exercise regiment, or a calm moment watering the flowers. Our first pick of the week belongs to @minori.koubou.kyoto, presenting a set of lovely vegan rice cakes. Made with nuts and other wholesome ingredients, these rice cakes look like food that can really give you a good start to the day. Rice is a staple meal in many Asian countries, and it’s always prepared in different ways.

 

 

Next up is @pamelabenrico’s vegan minestrone soup, a hot and enticing meal with a pleasant red color. Soup is a dish that you can savor at any time of the day, but is best enjoyed during cold weather. We love unadorned soup, but we also enjoy soup with plenty of chewy and flavorful veggie pieces in the broth.

 

 

@leangreendad presents a sumptuous vegan eggplant reuben, a healthy sandwich recipe that’s packed with flavor and nutrients. The great thing about sandwiches is that both the bread and the filling contribute to the culinary experience, with nice, healthy bread complementing the rich and flavorful ingredients within the sandwich. This particular reuben looks spectacular.

 

 

@janetsmunchmeals’ Zucchini, Quinoa and Tomato salad looks phenomenal. Quinoa is well known for its health benefits, and as such, salads often utilize quinoa for the best plant-based food experience. The contribution of tomatoes and zucchinis is also very apparent in this dish, giving extra color and texture to the lovely salad.

 

 

Our final pick of the week belongs to @wholesomelivity, presenting an eye-catching raw pistachio and avocado cake. Raw vegan desserts are always a treat to see, and the vivid green hue of this vegan cake is particularly eye-catching. With the ingredient list provided, you too can create and enjoy such a wonderful and healthy dessert.
