This vegan avocado waffle begins this week’s Food Friday, a lovely plate by @jaimeduardoaf. Set with a side of leafy greens and corn bits, this vegan snack looks like a great way to start the day. crispy baked tofu guys this is one of my favorite dinners! it’s relatively easy to make and baking it for a while gets you that crispy exterior with a soft inside. it’s my favorite way to eat tofu!! the first step is to drain the tofu. i used a block of firm tofu. cube it, place it on a baking sheet with another baking sheet and some heavy objects on top for about 15 mins preheat the oven to 400 degrees combine 1/2 a tbsp of vegetable oil, 1/2 a tbsp of sesame oil, 1 tbsp of soy sauce/ alternative, a little grated ginger (or powder), and garlic powder toss the tofu in the sauce, then spread it out on the sheet pan. bake it for 15 mins, flip the cubes, and bake for 10 more minutes. i served it with a veggie stir fry mix (I added some riced cauliflower to that) and topped it with sriracha, sesame seeds, and cilantro enjoy! • • • #dinner #teriyakitofu #tofu #bakedtofu #asiantofu #healthy #winter #vegan #plantbased #recipe #spicy #whatimeating #deats #veganrecipe #noodles #stirfry #christmas #diy #tutorial #healthylifestyle #healthyfood #tofurecipes #sriracha

These tofu flautas with chimichurri sauce are everything 😍 Not only are they easy to make, crunchy, savory and satisfying, but they're also loaded with protein and are much healthier than traditional deep fried flautas (not that there's anything wrong with treating yo self once in awhile 😘). Flautas are basically oversized taquitos and chimichurri is a slightly spicy, zingy, herb-y sauce that adds a punch of flavor (and vitamin C!) to any dish 👌If you're looking for a dish that is equally good on a weeknight and for entertaining (even the most adamant meat eaters), this is it. 💚Vegan cheesy baked portabellos with a creamy garlic, chive & mustard filling💚 Recipe below!👇⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Oooh yummy in the tummy! 😋 These cheesy shroomies are perfect for the weekend, either as a side dish or as the main, served with creamy mashed potatoes, steamed green beans and a mixed salad 🤩⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀ ☀️5 portobello mushrooms⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🥄1 tbsp extra virgin olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍁1 yellow onion⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🧛‍♀️2 garlic cloves⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🥥1/2 cup (1,2 dl) coconut milk⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🌱1 tsp dijon mustard⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍎1 tsp apple cider vinegar (or lemon juice)⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🧀50 g @daiyafoods vegan cheese (I used Cutting Board Collection Mozzarella Style Shreds)⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🌾1 bunch chives⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🧂Salt n black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍴Optional: 10 sliced black olives⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🌿Fresh herbs for serving (parlsey, chives, basil)⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How to:⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Carefully take off the stems from the mushrooms. Finely slice the stems, onion and garlic and sautée in olive oil for ca 8 minutes until golden brown.⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Meanwhile, preheat oven to 350F/175C. Put the mushroom caps on parchment paper on an oven tray.⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. Add coconut milk, mustard, apple cider vinegar, Daiya cheese and olives (if using) to the pan, let bubble n simmer for 2-3 minutes until the cheese is melted and sauce thickened. Fold in chopped chives. Take off the heat and add a generous amount of salt and black pepper.⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4. Spoon the filling into the mushroom caps and bake for ca 25 minutes until the tops are golden.
