This hit the spot! A broccoli and edamame salad with a little Asian flair. It's the easiest meal you can make if you’re in need of a big bowl of veggies but don’t know how to dress it up so it doesn’t taste, you know, boring? Now don’t get me wrong I love broccoli but only if it’s roasted, stir-fried or sautéed in some kind of saucy goodness. @livesimplynatural presents this broccoli and edamame salad with peanut sauce, a simple yet tasty vegan dish. We at Vegan Culinary Cruises appreciate all sorts of recipes, and we have a particular soft spot for this one.. 

 

 

Our next Food Friday pick is from @dokodemov, presenting their splendid-looking “Green and Clean Mushroom burger. Situated in Miami, Australia, this cafe’s vegan burger is served with healthy almond cheese between two spinach buns, topped with a pretty violet flower. For us, the bun is more than just a container for the patty. We are delighted to see that all-parts of this vegan burger – from the patty to the bun – look absolutely scrumptious.

 

 

Pizza is great, don’t you agree? This wood-fired delight from @piantepizza looks like a cut above the rest with well-roasted dough, mushrooms, and tomatoes topped with green herbs. The cinematic lighting doesn’t hurt its appeal either. Just look at those textures! We can only imagine how this Italian dish would melt in the mouth.

 

 

We just love food that you can bring along with you. @louieefoodie has created the perfect snacks on the go with these vegan BBQ chickpea wraps. Oil and gluten free, these wraps look like the perfect fit for a vegan traveler off to explore their latest destination.

shakshuka is traditionally a middle eastern dish of poached eggs simmer in a tomato based sauce 🍅 for my vegan version today I simply poached blended firm tofu with different spices and seasonings to create a similar ‘eggy’ effect 🌟this recipe actually turned out 10x better than I expected and was too delicious to enjoy straight from the pan 😋 vegan shakshuka (serves 2) 150g firm tofu 1/4 cup soy milk 2 tbsp nutritional yeast salt and pepper* 2 tsp ground turmeric 1/2 tbsp EVOO 1 brown onion, diced 1/2 large red capsicum, diced 2 large garlic cloves, minced 1 can crushed tomatoes 2 tsp smoked paprika 2 tsp ground cumin 1/2 tsp chilli powder 1/4 fresh parsley and coriander, chopped salt and pepper 1. in a blender combined tofu, salt, pepper, soy milk, and nutritional yeast and blend until smooth 2. divide mixture into two small bowls and stir in turmeric to one of the bowls 3. heat a small non-stick pan with EVOO, simmer garlic, onion, and capsicum until a jammy consistency is achieved 4. add in spices and continue to heat for a few more minutes 5. add in crushed tomato and simmer for about 10 minutes 6. spoon holes into the sauce and add in both of the tofu mixtures, allow this to simmer for about 10 minutes 7. garnish with salt, pepper, coriander, and parsley in the pan and serve with crusty toasted sourdough bread *can use black salt if an “eggier” taste is preferred

Last but not the least, @veryhungryvegan showcases a traditional Middle Eastern dish with a fresh vegan spin. This shakshuka uses tofu as an egg substitute, creating an all-vegan supper that looks filling delicious. @veryhungryvegan even provides a recipe in the description, so you too can try this vegan-inspired shakshuka yourself.
