Summer is almost around the corner, and we’re feeling rather festive as the days are becoming much, much brighter. Why not celebrate a vegan holiday indoors with some new and exciting cuisine? You can find inspiration from any place in the world, such as Mexico. While the culinary culture of Mexico incorporates meat in some of its dishes, that doesn’t mean that you can’t easily replace such ingredients with healthier alternatives. Flautas are an awesome tortilla-based Mexican dish that you should totally try out. Here’s a lovely plant-based recipe just for you.

Portions: 4

INGREDIENTS:

  • 1 can chickpeas, rinsed and drained
  • 1 pcs red pepper, chopped
  • 3 pcs spring onions, thinly sliced
  • 10 gr coriander, chopped
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 4 tbsp vegan mayonnaise
  • 1/2 pcs lemon, only the juice
  • 8 pcs tortillas (small)

PREPARATION:

  1. Preheat the oven to 180˚C.
  2. In a large bowl, coarsely mash chickpeas with a fork or potato masher.
  3. Add remaining ingredients and mix well.
  4. Spoon 2-3 tbsp of the chickpea mixture onto each tortilla and roll as tightly as possible. Then, place on a baking sheet, with seams facing downwards.
  5. Bake for 10-15 minutes or until crisp.
