This apple crumble recipe is an example of a raw vegan recipe, one that you can prepare for yourself as we begin the new year together.

INGREDIENTS:

Crumble topping:

  • 56 gr walnuts or pecan nuts
  • 30 gr dates, pitted and chopped

Apple filling:

  • 4 pcs apples, medium size, cored and chopped
  • 1 tbsp lemon juice

Apple sauce:

  • 2 pcs apples, medium size, cored and chopped
  • 70 gr dates, pitted and chopped
  • 34 gr raisins
  • 2 tbsp lemon juice
  • 0.125 tsp cinnamon
  • 0.125 tsp nutmeg, grounded

 

PREPARATION:

  1. To make the crumble topping, place the nuts and dates into a food processor, and process until the mixture is firm. Then, transfer to a small bowl and set aside.
  2. To make the apple filling, toss the chopped apples and lemon juice together in a medium bowl and set aside.
  3. To make the applesauce, place all of the ingredients (apples, dates, raisins, lemon juice, cinnamon, and nutmeg) into the food processor, and process to the consistency of applesauce, adding a little water as needed.
  4. Stir the applesauce into the bowl of chopped apples and lemon juice. Serve on small dessert plates or bowls sprinkled with the crumble topping.
