The new year has arrived, and already the past few days have been full of promise. We’ve got vegan and vegetarian recipes prepared for you, and a bunch of other cool plans that we’d like to showcase. Although some of us might be feeling a kind of 2020 “jet lag”, with all the feelings and memories of the last year still with us, we can easily step up and move forward for a brand new 2021 vibe. Welcome to this week’s Food Friday blog.

This week, we’ve got some great vegan food photos to show to you, prepared by the dedicated foodies of Instagram. We’ve got great sweets, tasty slices, and so much more in store for you this Friday. Hopefully we can make your day a little bit brighter.

Let’s start the week with something bright and colorful. @sunriseshackoxford presents this absolutely vibrant acai smoothie bowl, a delicious mix of various healthy and naturally sweet fruits. The great thing about vegan cuisine is that even the desserts are nutritious, with plenty of great benefits from eating them. Smoothies are a staple vegan dessert that you can make for yourself easily.

 

 

@leepoynt presents this delectable vegan bruschetta. An Italian antipasto, this bruschetta really lives up to its appetizer status. Just by looking at all the fresh veggies on the plate makes us quite hungry. The easy lighting also sells the whole freshness and appeal of this particular pre-meal food. Yum.

 

 

Have some dessert by @jodiskitchen. This snickers bites recipe is presented together with such a great food photo, giving you a glimpse of the sweet plant-based dessert that you can freely prepare for your family and friends. The cold winter days are still with us, so why not sweeten your chilly evenings with snacks like these?

 

 

This mouth-watering vegan pizza by @alamholistic looks quite delicious! It looks so green and clean, with the verdant colors meshing well with the black peas and the red tomatoes. Vegan pizzas are like vegan burgers, in a way, in how they are a plant-based alternative to popular fast foods. They can also be quite healthier to eat, and with the recipe presented here, you can make such plant-based fast food at home.

 

 

Our final pick of the week belongs to @natmyers69, presenting an absolutely splendid potato and zucchini rosti. Like ratatouille from France, the Swiss rosti was once humble farmer’s fare, a hearty fritter-like breakfast dish made of potatoes and served with other important meals. Here we see a wholly vegan variant of the meal, with all the beautiful colors and ingredients that make it more visually pleasing. A great way to end the week.
